Last year I gave up shellfish on the 17th of Tammuz. (I find myself missing my faves - oysters and calimari, and eel for sushi - less than I thought I would. I have a rather abstract memory of how good they taste, but no cravings. If I had to give up chocolate, well, that would be another story.)
This year I decided to pay attention to separating meat and milk in my cooking and eating, preparatory to eventually kashering my kitchen.
A friend is bugging me to just do it - the Chabad people will even come in and kasher my kitchen for me. But that is too much of a shock to the system, until I am mentally prepared.
Adjusting recipes is not the problem. As Naomi says, as far as kashrut goes, this is the best time in history to be Jewish. And like her, I don't know when I have ever exactly followed a recipe. (I have been using tofu for some time to cream soups, it makes them lighter and more refreshing, especially cold soups.)
But I am afraid I would mess up my kitchen by forgetting something, and have to kasher it all over again. I would rather first get in the habit of not eating dairy and meat together. While I use up all the non-kosher meat in the freezer. . . .
