Mediterranean lamb marinade
I just made a marinade for a lamb chop. Or maybe it's a relish. Proportions are for you to decide.
Toast pinenuts in olive oil till light brown.
Add more olive oil. (Try Aguri or Agrumato Meyer Lemon infused olive oil)
Add:
Chopped shallots
Minced garlic
Pitted kalamata and/or moroccan olives
Thin slices of preserved Meyer lemon
Chopped figs (Kalmyrna or Mission will work equally well, or fig preserves)
Buckwheat or other dark honey for any additional sweetness you want
Saute until soft. Put in ziploc bag with cut of lamb, let marinate however long you like to marinate things. Remove marinade mixture, broil lamb, top with marinade mixture. You should probably reheat the marinade to make sure it's free of bacteria.
